The kids are all heading back to school soon and we’re ready to have one last summer bash for Labor Day. It’s still nice and warm here in North Carolina, so we’re planning a cook-out with some friends at a local park.
Our friends are all coming to join us and we’re looking forward to spending a last afternoon with them all before everyone becomes busy with the school year. The kids will all play on the playground and run around while the adults chat and catch up. It should be lots of fun!
This year, we’re adding some sizzle to our last summer cookout with a tangy twist on an old favorite. .
Creamy Spinach & Artichoke Dip
PREP TIME: 25 min.
TOTAL TIME: 1hr. 45 min.
MAKES: 32 servings, 2 Tbsp. each.
Ingredients
1 cup Miracle Whip
1 cup Light Sour Cream
1 can (14 oz.) artichoke hearts, drained, finely chopped
1 pkg. (9 oz.) frozen chopped spinach, cooked, cooled and well drained
1/2 tsp. garlic powder
3 green onions thinly sliced
3 canned chipotle peppers in adobo sauce, chopped
Directions
Combine ingredients.
Refrigerate 1 hour or until chilled.
This couldn’t be easier to make! Just measure out the ingredients and stir together.
I love it!
Once the ingredients are all combined, just pop into the fridge for an hour to chill.
The result is a spinach dip with a kick! The spinach and spicy chipotle peppers turn the classic dip into a game-changer.

I’ve been trying to think of a good thing to take to a casual reception. Thanks for solving that question for me. I like the idea of the spinach, Miracle Whip, and other ingredients in the dip. When I was a kid and money was relatively nonexistent, we had a Miracle Whip and bread sandwich at least 3 times a week. The taste was yummy then and is still yummy today.

I grew up using Miracle Whip on sandwiches, in pasta salads, was my favorite. When I met my hubby, he was not a fan and preferred real mayo. I did try to sneak it in some recipes, but he always could tell. 🙂
