Tis the season for fuzzy scarves, knee-high boots, hot chocolate… and cookies! I absolutely love this time of year and all of the delicious sweets that we can indulge in! The closer we get to the holidays the more cookies it seems I am baking – whether I am participating in a cookie swap with my moms’ group, baking up treats for a bake sale for the kids’ school, or even putting together beautiful sweet treat baskets for my friends and co-workers. No matter what, everyone loves unwrapping delicious homemade cookies, which is why I am absolutely loving this Cookie recipe.
The base is a simple and delicious cookie recipe that you can stir in 1-2 cups of your favorite mix-ins to make it perfectly, uniquely yours!
As you know, we made a batch a few weeks ago with butterscotch and chocolate chips mixed in – and they turned out absolutely delicious! So delicious in fact that I had to make a second batch… since my family pretty much demolished the first batch.
For our second batch of cookies, we used chopped up peppermint candy drops for the mix-ins. I have to say, these cookies are AMAZING!
Peppermint Candy Cookies
Ingredients:
1 cup butter
3/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
30 peppermint candy drops, chopped into large pieces
Directions:
Preheat oven to 375°. Mix butter, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.) Add the peppermint candy drops until every spoonful of dough has some of the delicious mix-ins or choose from the variations below.
Drop dough by rounded tablespoonfuls on ungreased baking sheets 3-inches apart.
Bake 10 to 12 minutes until edges are lightly golden. Cool 1 minute on wire rack; remove from sheets to cool completely.
* Wait several minutes for the cookies to cool, then add a whole Peppermint Candy Drop on top of each cookie.
