Spring is here and I couldn’t be more excited! I love the enjoying warmer weather, spending more time outside with the family, and buying delicious fruits and vegetables at our local farmers’ market. Since we live only a couple of hours from the beach, we’re looking forward to the weather getting warm enough for some weekend trips to the coast.
I’m lucky to have grown up only a couple of hours away from the beach, so it has always been a huge part of my life. I have so many memories of beach trips from my childhood and love being able to help my children create their own wonderful memories of the coast.
Whether we’re traveling for a weekend getaway or planning a luau party or beach-inspired picnic here at home, the coastal theme is often part of our warm weather months. One of our favorite ways to celebrate the coast is with delicious meals made with our favorite fresh seafood tastes.
I wanted to share one of our favorite recipes with you – Shrimp Scampi Stir Fry. It’s super easy to put together and the fresh vegetables pair well with the garlic and butter flavor of shrimp scampi. We love it!
Easy Shrimp Scampi Stir Fry Recipe
Makes 6 servings
Ingredients
1 box Gorton’s Simply Bake Classic Shrimp Scampi
2 tablespoons olive oil
1 large head of broccoli, cut into small florets
1 large red bell pepper, ribs and seeds removed, thinly sliced
1 large green bell pepper, ribs and seeds removed, thinly sliced
1 medium yellow bell pepper, ribs and seeds removed, thinly sliced
3 small carrots, chopped, or 1 1/2 cups baby carrots
Directions
Prepare both servings of Gorton’s Classic Shrimp Scampi in the oven according to box directions. Set aside.
Heat a wok or a large skillet over medium-high heat on the stove. Add 2 tablespoons of olive oil.
Add the peppers, carrots, and broccoli to the hot skillet. Cook for 1-2 minutes and then add the garlic and ginger. Cook over medium heat, stirring occasionally, until the vegetables are crisp but tender, about 5-7 minutes. Cook them longer if you like your vegetables softer.
Cut open the packages of Gorton’s Simply Bake Classic Shrimp Scampi and place the shrimp in a bowl. Pour the remaining garlic butter sauce over the vegetables. Stir until the veggies are well coated, then allow to simmer for about 2 minutes.
Spoon veggies and shrimp scampi over cooked rice. Enjoy!
