My husband has been out of town for a week.
I knew he’d be traveling across the country, so I’d planned ahead. I had fun projects lined up, activities scheduled and back-up ideas in case they were needed. I knew I’d be busy during the week, but thought I was ready.
I was not ready.
The only thing that worked this week was my menu planning. I bought several types of pasta, lots of great veggies, sauces and sides and, if I do say so myself, rocked the meals all by myself.
Worked so well, in fact, that I’m now planning to make a lot of pasta during the holidays.
Pasta is easy, it’s good and it’s a warm, filling, healthy meal I feel good serving my family. I’m already looking forward to all of the wonderful pasta recipes I will make over the holidays this year.
I can make large pans of lasagna and huge pots of spaghetti for the large family dinners, and smaller, more intricate recipes for the smaller get-togethers.
Pasta is easy and versatile – perfect for all of our holiday occasions!
Here’s the recipe for one of our favorites this week, from PastaFits:
Roasted Garlic, Sundried Tomatoes and Parmesan Pasta
Ingredients:
1 lb. of your favorite pasta
4 heads of garlic
1 cup sun-dried tomato halves, drained
Drizzle olive oil
2 Tbsp parmesan cheese
Pinchful of oregano leaves
Salt and pepper
Herbs
Optional: Additional shaved parmesan cheese for garnish, Feta Cheese for Flavor
Directions:
1. Cook pasta noodles as directed on the package.
2. Preheat oven to 400ºF.
3. Cut off the tops of the garlic heads and place them in a small baking dish. Drizzle with olive oil, and place a small piece of foil over the top, so the tops don’t burn.
4. Roast for 20-25 minutes, then remove from oven and let cool about 5 minutes.
5. Squeeze the roasted garlic into a small bowl. Add another drizzle of olive oil, the parmesan cheese, oregano leaves, salt and pepper and herbs.

6. Once the noodles are cooked and drained, add the mixture and toss together with sundried tomatoes (and Feta Cheese, if desired)

7. Sprinkle shaved parmesan cheese on top if desired.
