It seems like a lot of evenings lately I’ve had a lot of meal time barriers. By that I mean team practices, after school clubs, homework, class projects and the other everyday tasks that can interrupt dinner preparation. My husband and I agree that having a family dinner is important, so I do my best to make a home-cooked meal no matter how hectic things become. I’ve found on those busy nights, a pasta meal is the perfect solution for dinner time.
.When I make a pasta dinner for the family, I’m able to multitask. I can cook the pasta, help my daughters with their homework, make a sauce and side salad, set the dinner table, etc. It usually takes about 10-12 minutes to cook the pastas we like and it’s the perfect amount of time for me to get those other quick tasks out of the way and get ready for the meal.
Tonight my husband was working late, both daughters had extra homework because of a school festival last night, my son fell and bumped his head and needed cuddling. It was a great night to make a quick and easy pasta meal, so I chose the Three Cheese Tortellini in Sage Brown Butter Sauce.
Three Cheese Tortellini in Sage Brown Butter Sauce Recipe
1 package Three Cheese Tortellini, Family Size (12 ounces)
8 Tablespoons Butter
10 Leaves fresh Sage
1/2 Cup Parmigiano-Reggiano Cheese, grated
BRING 6 quarts of water to a boil. (Optional – add 2 Tb salt)
COOK tortellini according to package directions.
MELT butter in sauce pan and remove from heat as soon as the butter begins to turn a golden brown.
ADD sage leaves to pan.
DRAIN tortellini and add to butter/sage mixture.
RETURN pan to medium heat.
TOSS gently for 1 minute to coat the tortellini with sauce.
DIVIDE tortellini among 6 warmed plates, sprinkle with grated Parmigiano-Reggiano cheese and serve immediately.
The Three Cheese Tortellini in Sage Brown Butter Sauce was a huge hit with everyone. I’ll definitely be making it again!
