It’s already January, and that means lots of great things: a new year, sweater weather, and football!
I’ll admit that I wasn’t a fan of football growing up. There wasn’t a team at my small high school, and I honestly just didn’t realize what I was missing. Once I started dating my husband, though, I quickly learned how much fun football can be.
Whether we’re meeting friends to tailgate on game day or inviting people over to watch a game on TV, football is always fun. In addition to cheering for our favorite teams, I also love spending time with our favorite friends and enjoying all of our favorite foods.
To celebrate the football and the big game, we always have a big (indoor) cookout with friends. Some of our neighbors are big football fans just like we are, so we love to hang out and enjoy the game together. I started making taco dips a few years ago and after changing the ingredients a few times, I’ve finally settled on my absolute favorite recipe. If you love tacos, you have to try this dip—it’s amazing!
There were two big football games last weekend, so I got the chance to make my dip. I headed straight to my grocery store to pick up all of the ingredients and get ready for game day. For the Taco Dip, I use our favorite cheddar or Mexican cheeses.
I have joked before that if I were stranded on a desert island and could take one thing, it would be cheese. That’s really not far from the truth. There’s just nothing like a yummy, oooey, gooey, cheese-y recipe in my opinion. In fact, I use both melted and unmelted thick cut cheese in this same recipe—it’s that good!
7 Layer Taco Dip with Lime Cilantro Rice
Ingredients
1 1/2 pounds ground beef
1 (16 ounce) can black or refried beans, heated
2 cups Lime Cilantro Rice, prepared (recipe below)
1 (16 ounce) container sour cream
½ of an 8 ounce package cream cheese, softened
1 package Taco Seasoning Mix (I use Mild)
1 package shredded Mild Cheddar cheese
1 package (8 ounces) shredded Mexican Cheese
1 small head iceberg lettuce, shredded
1 cup chopped tomatoes
Tortilla chips
Directions
In a medium bowl, blend the sour cream, cream cheese, and taco seasoning mix. Set aside.
In a large skillet, brown ground beef; then, drain.
Spread warm black beans into the bottom of a 9×13 inch serving dish. Add 2 cups warm Lime Cilantro Rice. Layer browned ground beef over the top of the rice. Sprinkle 2 cups of mild cheddar cheese over the ground beef while meat is still warm so the cheese melts.
Layer shredded lettuce over melted cheese and beef.
Using a spatula, spread sour cream mixture evenly over the lettuce. Add tomatoes, then top with shredded Mexican cheese.
Serve with tortilla chips. Can be served at room temperature, while bottom layers are still warm, or served cold after being refrigerated overnight. We prefer to eat the dip right away while the meat, beans, and rice are warm.

Lime Cilantro Rice
Ingredients
1 cup long-grain white rice
2 cups water
1 tablespoon butter
1/3 cup chopped cilantro
1 tsp lime zest
1 TB fresh lime juice
Directions
Bring water to a boil, then stir butter and rice into water. Cover the pot and reduce heat to low, simmering rice until tender (about 20 minutes). Stir lime zest, lime juice, and cilantro into warm rice just before serving.
