One of my family’s favorite recipes is one of the simplest. Whether we want a big meal with pasta, salad and bread or just a small bowl of pasta for lunch, this Garlic and Tomato Pasta is always a hit.
It’s easy to make, so it’s always perfect for this busy mom. And it’s full of flavor, so everyone loves it.
Garlic and Tomato Pasta Recipe
Ingredients
• 1 (8 ounce) Package Linguine
• 4 oz Cherry Tomatoes, sliced in half
• 2 Cloves Crushed Garlic
• 1 Tablespoon Olive Oil, plus Olive Oil for pan
• Salt to Taste
• Ground Black Pepper to Taste
• 1/4 Cup Grated Parmesan Cheese

I love simple pasta dishes like this – like you say – they are often the best. I make similar dishes several times a week, and never get tired of it!
And Olive Oil is such a staple in our kitchen – I use it for so many recipes and foods from salad dressings to cooking oil. I always have frershly (home)made “Roasted Garlic Oil” on hand – a must for tossing with pasta and flavoring everything from veggies to sauces to protein dishes.
It’s great for roasting vegetable too: I cut them into the size I want, place them in a plastic baggie and drizzle with olive oil. Shake to coat and add to baking/roasting pan. Keeps them mosit and flavorful.
People are discouraged from using olive oil for frying because of it’s lower heat/temperature tolerance. But I love the flavor it adds so to solve the problem, I cut the olive oil with grapeseed or canola oil to allow for higher heating temperatures. I also use it to cut the amount of butter when using for say, scrambled eggs or adding to dishes that call for a certain amount of butter when you want to cut down a little on the butter.
In anycase olive oil is essential to any serious kitchen – and I can’t even imagine a pasta dish without it!
Oh and btw, I always have both Extra Virgin and Extra Light Olive Oils on hand. I also like to have not only Italian, but also Greek and Spanish olives oils on hand as well. (They REALLY are different!) But when it comes to “flavored oils” (like Garlic, Lemon, Basil, Rosemary or Chili – I always make my own – just so much better!
I use extra virgin olive oil for so many things, I’m not sure I know what to say is my favorite way! I just used it today for making Spanish rice, the olive oil does add a nice finish. Also salads, of course, but especially those with cheese, and I like the balsamic vinegar with it. I also use it in my own hummus.
This looks good and easy enough for me to make for my family.
