I’m so ready to kick off my favorite season of the year!
Summer means long, sunny days filled with kids’ laughter and time for relaxation. The kids will be tracked out of school soon and we’re already planning lots of fun family days at home and at the pool.
As you know, I’m always looking for ways to make days a little more fun for my three kids. I love to make cleaning time, learning time and meal time a little bit more interesting whenever I can.
With that in mind, I created a fun little dish this week that the kids absolutely loved. It wasn’t hard – just a combination of two of their favorite dishes, but putting them together made it a little more fun for the kids.
It’s Popcorn Shrimp with Mac and Cheese:
The kids love shrimp and love mac and cheese, so I knew this would be a hit.
But I had no idea how much fun they’d think it was!
I just made our favorite mac and cheese for dinner. While it was cooking, I popped a tray of SeaPak Popcorn Shrimp into the oven for 10 minutes.
The kids came down for dinner expecting the usual Mac n Cheese dinner and started giggling when they saw that it was a little different.
My two younger kids picked the shrimp off right away and asked for more shrimp. My older daughter tried a few bites of cheesy-shrimp macaroni and said it was really good. She also wanted more shrimp though.
Next time, I’ll be sure to add more shrimp to the top! 🙂

We kicked off summer by heading to Jersey for a camping trip, pirates festival and a trip to the shore! It was the perfect start to summer vacation.
My youngest would love this. You have her two favorite foods; shrimp and pasta (with cheese).

Years ago we had chinese food and my son tried the shrimp that were fried and loved them. Once he found out what they were he wouldn’t eat them. They have a great flavor and this looks so yummy. Very nice!!
