Since having my first daughter 9 years ago, I’ve joined 5 different playgroups. It’s nice having so many little friends for my kids to play with, but there have been so many people coming and going over the years, that it’s hard to keep everything straight. I can’t always remember who knows whom and which group some people are in.
So in the past year, I’ve started sending out mass invitations. If we want to plan a day at the park or an afternoon at the playground, I just let everyone know and whoever wants to show up is welcome to join us.
Since I am not always certain who will be showing up, I’ve started planning snacks or lunches that are gluten-free. Several kids in the playgroups are on gluten-free diets, along with my niece and nephew, several neighbors and lots of children in my kids’ classes. It’s simpler for me to go gluten-free and not worry about leaving anyone out.
So I’m always on the hunt for gluten-free options that are not only delicious, but that also have great health benefits, for my friends, for my family and for myself.

Peaches and Cream Steel Cut Oatmeal
.
Ingredients
.
1 Cup Udi’s Gluten Free Steel Cut Oats
3 Cups Water
1 cup Gluten Free Yogurt
Peach Slices
.
Directions
.
Boil water. Add oats and stir.
Reduce heat and simmer for 15-20 minutes until desired texture.
Spoon into serving dish.
Top with small spoonfuls of yogurt and slices peaches.
