You know how sometimes you get a craving for something and just nothing else will do? You struggle to think about anything else, because all you want to do is satisfy your craving? Well I had one of those moments this week and instead of agonizing the way I sometimes do, I hopped in the car, went to the store and before long I was sitting down to enjoy that one thing I just had to have… easy chicken parmesan.
Now, my family does not have the love for traditional chicken parm the way I do, but they all love pasta, so I wanted to create something that would satisfy my craving while leaving my family happy as well. That’s when I thought about mixing all of the ingredients together and smothering it in cheese… the result – absolute perfection.
Chicken Parmesan can take hours to make from scratch – time that I just simply do not have. We take a shortcut with store-bought pasta sauce but feel free to add homemade if you prefer.
Easy Chicken Parmesan Pasta Bake
Ingredients:
3 cups pasta sauce
6 tablespoons Finely Shredded Parmesan Cheese
6 small boneless skinless chicken breasts
1 package pasta, uncooked
2 cups Shredded Mozzarella Cheese
Directions:
Preheat oven to 375 degrees F
Lightly coat 13×9-inch baking dish with cooking spray. Pour sauce into bottom of pan. Stir in 4 Tbsp. of Parmesan cheese. Place chicken into sauce, turning to coat both sides of each breast with sauce. Cover.
Place baking dish into oven to cook for 30 minutes.
While chicken is cooking, prepare pasta as directed on package.
Remove chicken from oven and top with remaining cheeses. Bake uncovered for 5 minutes or until cheese is melted.
Drain pasta and serve topped with chicken and sauce.
