Summer may have just officially started, but around here it has been HOT for weeks. In fact, the high temperatures are already setting records this year and with the humidity here in N.C., it feels almost unbearable.
Since one of our favorite ways to cool off is to enjoy an awesome ice cream sundae, we’ve started getting creative with our treats. The kids have all taken on more chores and responsibilities over the summer, so even though they’re out of school, they’ve been working (and playing) hard.
As a reward for their hard work, we’ve started enjoying Sundae Sundays.
The kids love to create fun ice cream sundaes with lots of different Hershey’s Syrup, sprinkles, whipped cream and toppings, changing up the flavors every Sunday. But this week, we were especially creative and added mini cookie cups to our sundaes. They were a huge hit, so I wanted to share them with you.
The cups were super easy to make. Just take pre-made chocolate chip cookie dough and shape it into circles. Press the centers down a little to make bowl shapes and press down into the cups of an ungreased cupcake pan.
Bake the cookie cups at 325º for 16 minutes, or until they are light brown.
Remove the pan from the oven. While the cookies are still hot, press a narrow glass into the cookies to create a bowl area in each.
Let the cookie cups cool and harden in the cupcake pan.
Once cooled completely, remove from the pan and add a small scoop of ice cream.
Top with your favorite Hershey’s Syrup and sprinkles.

As you can see, there are lots of different ways to top off your Easy Cookie Cups Ice Cream Sundaes. My kids loved to each choose a different syrup flavor and then divide and share all of the different little sundaes. The flavors are all so yummy, they really can’t go wrong whether they choose Hershey’s Chocolate, Caramel, Strawberry or Special Dark Syrup!
