Easy Red Velvet Crinkle Cookies
Easy to make and a huge hit for the holidays! (Makes 3 dozen)

Ingredients:
1 box Red Velvet Cake Mix (I use this mix),
6 tbsp Butter,
1 cup Powdered Sugar,
1 tsp Cornstarch,
2 Eggs

Instructions:
1. Preheat oven to 375°.
2. Combine cornstarch and powdered sugar in small bowl.
3. In a large bowl, combine cake mix, melted butter and eggs. Mix with a spoon until all dry ingredients are incorporated.
4. Drop by spoonful into powdered sugar. Coat completely and then roll them into balls 1-inch balls covered with powdered sugar.
5. Place on cool, ungreased baking sheets about 2 inches apart.
6. Bake 9-11 minutes or until set.
7. Cool several minutes on baking sheet then transfer to wire rack to cool completely.
Tips: Can add white chocolate chips or cream cheese icing drizzle for added flavor.Enjoy!

I’ve made these. They’re super easy, taste great and look fantastic. Can also use a yellow or white cake mix, tint it green and make a batch of green cookies for a red and green Christmas cookie platter.

I haven’t tried that, but don’t see why not. I’ve frozen cakes before (wrapped very well in several layers of plastic wrap and aluminum foil), so the cookies should be fine frozen too.

From what I’ve read, you can turn almost any cake mix into cookies. I haven’t tried it, yet, but definitely should, huh? 🙂

And yes, we have made cookies with cakes mixes—-all kinds. We made strawberry, lemon, chocolate(with Christmas M&Ms- a favorite), and butter pecan—-we added chips, white chocolate, butterscotch etc. You can pick whatever flavor you like. Some even do TWO flavors and roll the ball together half and half. The possibilities are endless. I am looking forward to seeing these pretty red velvet ones! Thanks for sharing! <3

I’m wondering if it’s a different brand of mix from what I used? I would probably add some powdered sugar or added cake mix? :/ I’ll have to make sure I note the brand from now on.

Try refrigerating the dough for 10 mins. This worked for me and made the dough less stickey.

I don’t and I wish I’d paid attention since there are apparently differences in the mixes. :/
I’ll have to make them again and see how the different brands come out. Hopefully yours turn out OK. If not, try adding confectioners sugar and chilling the dough for a while. 🙂

I always use the standard cake mix box that you would use for a stacked 2-layer round cake. 🙂

Made these today and they are very good and easy. Also want to say you probably only need a 1/2 cup of powdered sugar for rolling.

FYI
made these with 2 different cake manufacturers and wow did the cookies come out so different. Non Duncan Hines, small round balls, but with Duncan Hines they spread out a lot.

These MUST be dropped by spoonful into the powdered sugar and covered before you roll them into balls. If not they stick to your hands because it’s like a brownie batter. Once done they are absolutely delicious!
