Easy Salt & Pepper Chicken
When I was a new wife and then a new mom, I had time to plan dinners. I would shop several times a week, creating fun new recipes for each and every family dinner.
Now that I have three kids and own my own business, time is something I no longer seem to have. Instead of creating a fresh from-scratch dinner every night, I cut come corners. I make large batches to freeze for later meals and make multiple recipes from one ingredient whenever I can.
Because I don’t have time to shop several times a week, it’s important for me to get everything I need in one trip. I won’t be able to head back to check for something that’s out of stock or try a couple different grocery stores because I can’t find the ingredients I need. To save time and money, I head to our local Harris Teeter, where I know I can find everything I need – including all of our favorite organic foods – at prices I love.
One of my favorite ingredients to use for our family recipes is chicken. It’s super simple to make, tastes great, is healthy, and is so versatile. I can add it to dozens of our favorite recipes, serve it with a salad or sandwich, or create my own recipe.
For meals this week, I planned to make a basic chicken recipe with salad and then use the leftover chicken in several more meals. I found everything I needed at Harris Teeter, including fresh chicken breast tenderloins, Harris Teeter Organic salad greens, Mexican cheese, and flour tortillas. Without even spending $20, I had enough ingredients to make several different meals for the next few days.
To start the week, I made simple Salt & Pepper Chicken to serve with salad greens.
Easy Salt and Pepper Chicken
Ingredients:
Chicken Tenders
Freshly Ground Black Pepper
Kosher Salt or Flake Sea Salt
1 teaspoon olive oil
Instructions:
1. Preheat oven to 350°F.
2. Using a mallet, rolling pin, or the flat bottom of a glass or bowl, flatten the chicken pieces so they will cool evenly and more quickly.
3. Salt and pepper both sides of the chicken pieces
4. Add 1 teaspoon of olive oil to a medium sauté pan over medium-high heat. Add the chicken and cook until very lightly browned on the both sides.
5. Place the chicken pieces into an oven-proof pan. Cook chicken in the oven 350°F until the juices run clear (about 10-12 minutes). Remove from oven and serve.
Enjoy!
For a couple of lunches afterward, I used the chicken sliced over a fresh salad.
Finally, that same leftover chicken was perfect in Chicken Quesadillas for family dinners two nights – once with a bit of ranch dressing and once with a little BBQ sauce. Easy, delicious, and inexpensive meals – I love it!
