It seems like every day since summer began we have eaten outside! From just picnicking on the back porch to BBQ’s at the park to quick snacks by the pool, it has just been too pretty to stay cooped up indoors. You do not need a special occasion to head outside to enjoy your lunch in the sunshine – just grab your favorite sandwich ingredients and start cooking.
Sandwiches are my easy go to lunch pretty much every single day in the summertime. Sub sandwiches, egg salad sandwiches – even grilled cheese are the perfect, light meal in the middle of a hot summer day.
This week we have already had one of our favorite sandwiches – Grown Up Grilled Cheese. This awesome twist on a childhood favorite is easy to make and tastes insanely good.
Grown Up Grilled Cheese
Ingredients
Sharp Cheddar Sliced Cheese
Provolone Sliced Cheese
2 slices thick-cut bacon, cooked
2 tsp dijon mustard
2 thick slices sourdough bread
1 Tbsp salted butter, room temperature
Instructions
Preheat skillet on medium heat.
Spread butter onto one side of each slice of bread. Spread dijon mustard onto the opposite side of one slice of bread.
Place buttered sides of the bread face down in skillet.
Layer 2 slices of sharp cheddar cheese on one slice of bread and 2 slices of provolone cheese on the other slide.
Cook in hot skillet until bread is golden brown and cheese is melted, 3 to 4 minutes per side.
Add bacon pieces and tomato slices on top of melted cheese on one slice of bread and top with the other.
