Lemon Dill Dijon Salmon Wrap Recipe
It is hard to believe that we are just a few short weeks away from the holidays. This year seems like it has really flown by! It has been a great year for me though and I have made a lot of changes – most notably to my health. I know we always say that we have to take care of ourselves first in order to better take care of others – but this year I actually started putting it in to practice and I haven’t felt better.
One of the biggest things I changed was my diet – not enormous changes, but certainly a change to years before. I have focused on eating more meats and vegetables with fewer snacks and junk foods. As the holidays approach, I want to make sure I stick to my guns and do not let the festivities of the season set me back on the progress I have made this year.
Gorton’s has long been a staple in my house – but even more so this year while I have been focusing on cooking better meals for myself and my family. I love the fresh-caught, perfectly seasoned and totally real flavor of Gorton’s Seafood – whether I am preparing it to go on a salad or just to eat beside my favorite veggies. My favorite is Gorton’s Classic Grilled Salmon – which I have prepared about a dozen different ways.
I remember as a little girl seeing my mother pull that iconic yellow box out of the freezer to prepare dinner, and it makes me smile every time I do the same. With the craziness of the holidays starting up, I am stocking up on ingredients for my favorite recipes. I want to make sure I always have exactly what I need to make good choices about my meals – even in the chaos of the season. One of those is my Lemon Dill Dijon Salmon Wraps. They’re quick and easy to put together, and the flavors are amazing! Here is the recipe for you – I hope you enjoy it as much as we do!
Lemon Dill Dijon Salmon Wraps
7 WW Smart Points per Serving
Servings: 2 servings
Lemon Dill Dijon Dressing Ingredients
3 Tbsp plain fat free yogurt
1/8 cup freshly squeezed lemon juice from a medium lemon
1 tablespoon finely chopped fresh dill
1 small uncooked scallion, thinly sliced
1/2 teaspoon Dijon mustard
1/2 teaspoon finely grated lemon zest
Pinch of kosher salt
Pinch of freshly ground black pepper
Lemon Dill Dijon Dressing Ingredients
Place all ingredients except for the yogurt in a medium bowl and whisk to combine. Gradually fold in the yogurt until combined. Keep refrigerated until ready to use.
Salmon Wrap Ingredients
Gorton’s Classic Grilled Salmon, prepared according to box, cut into strips
1/2 cup cucumbers, thinly sliced
2 Whole Wheat Tortillas
4 leaves of butter lettuce
Salmon Wrap Preparation
Place tortillas on a flat surface and spread lightly with Lemon Dill Dijon Dressing. Place lettuce down the center of the wraps. Top with cucumber and strips of grilled salmon. Roll firmly to enclose filling. Cut in half to serve. Drizzle remaining dressing over the top of the wraps, or serve on the side for dipping.
