Many of our happiest family memories are of summer activities. Whether we’re spending the day in the pool, heading to the beach for vacation, or playing in the back yard, our summers are full of fun. It’s important to create special moments together as a family whenever we get the chance because the children are growing up so quickly.
Since we have more time to spend together as a family during the summer, we have a lot more meals together. From picnics on hikes in the woods behind our house to cookouts with neighbors and friends, there are more opportunities to enjoy good food together.
We made a fun dessert recently for a cook-out and wanted to share it with you – S’mores Kiss Cookies!
S’mores Kiss Cookies
(Makes about 3 dozen cookies)
1 1/4 cup graham cracker crumbs (set ¼ cup to side)
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 stick unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
20 large marshmallows, cut in half
40 HERSHEY’s chocolate kisses
Preheat the oven to 350 F. In a large bowl, combine 1 cup graham cracker crumbs, flour, baking soda, and salt.
Cream the butter and sugar together with an electric mixer until smooth and creamy. Then turn the mixer on low and add the eggs and vanilla extract, mixing until just combined.
Gradually add dry ingredients and mix until just combined.
Drop rounded tablespoons of dough onto a baking sheet, 2 inches apart.
Bake at 350 F for 6-8 minutes or until edges start to turn golden brown.
Remove the cookies from the oven and gently press a half marshmallow, sticky side down, onto each cookie. Let cool completely.
Once the cookies are completely cool, place them under the broiler for 1-2 minutes. When the top of the marshmallows are golden brown, remove the cookies from the broiler and press a HERSHEY’s kiss into the middle of the marshmallow.
Sprinkle additional graham cracker crumbs over top.
