Strawberry and Cream Cupcakes
Ingredients – Strawberry Cupcakes
1 Box White Cake Mix (I like this mix)
1 ¼ cups strawberry-flavored soda pop
Vegetable oil and/or eggs/egg whites called for on cake mix box
Red food color, if desired
Directions – Strawberry Cupcakes
1. Pre-heat oven to 350°F (325°F for dark or nonstick pans). Line muffin pan with cupcake liners.
2. Prepare cake mix as instructed on the box, substituting strawberry soda for the water. Add food coloring if desired.
3. Spoon cake mix into cupcake liners, filling each 2/3 full.
4. Bake as instructed on the cake mix box.
Ingredients – Cream Cheese Frosting
8 ounce package of cream cheese, softened
1/2 cup butter, softened
2 ½ cups sifted powdered sugar
1 ½ teaspoons vanilla extract
Directions – Cream Cheese Frosting
Combine the cream cheese and butter in a medium bowl and mix until creamy. Add in the vanilla and mix, then gradually stir in the powdered sugar. Store in the refrigerator after use.
