Spring is finally here which means the days get longer and we get busier – which means even though it stays light outside later, it seems I have less and less time to get a great dinner on the table.
A friend of mine shared her favorite “go to meal” on Facebook the other day – Bacon Wrapped Cheesy Chicken Bake – and I knew I just had to try it.
Not only did it sound delicious, but it was low carb and something I knew the entire family would like.
Plus it’s ready in less than 30 minutes and I can get everything I need at any grocery store – talk about a total win-win.
Bacon Wrapped Cheesy Chicken Bake only takes five ingredients – chicken, shredded cheese, cream cheese, seasoned salt, and your favorite thick cut bacon – and it’s soooo good!
Easy Bacon Wrapped Cheesy Chicken Bake Recipe
Ingredients
Fresh chicken breasts, trimmed
1 cup your favorite shredded cheese
1 package cream cheese
Seasoned Salt
1 package Hickory Smoked Bacon
Directions
Begin by butterflying your chicken breasts and stuffing it with cream cheese. Then sprinkle on shredded cheese and seasoned salt. On a foil lined baking tray lay out the bacon slices side by side. Place chicken breast in the center and wrap the bacon slices tightly around the chicken – criss-crossing over the top.
Bake at 400* for 20-25 minutes or until chicken is completely cooked through and bacon gets crispy.

This recipe was a huge hit with the family and we even had leftovers which we warmed up the next day for lunch. I think it may have been even better the next day!
The bacon gives the chicken such a good smoky flavor and crisps up perfectly on top. Serve with your favorite sides for a delicious meal in under 30 minutes. So delicious!
