I absolutely love Christmas!
Every year, I love making plans to see friends and family over the holidays. It’s such a wonderful time to celebrate and reconnect with loved ones.
But it seems like I always make a few too many plans. I overextend myself and then work too much over the holidays instead of really relaxing and enjoying myself.
So this year, I’ve been planning meals, desserts, and snacks that will taste amazing, but won’t take up a lot of time in the kitchen.
This one, in fact, is one of my favorites. I just put the sauces together in the morning and pop the food in the oven about 20 minutes before mealtime. Easy-peasy and sooooo good!
Shrimp Spring Rolls with Sauce Medley
Prepare SeaPak Shrimp Spring Rolls as directed on box.
Serve with a medley of sauces like Ginger-Orange Sauce, Sweet Chili Sauce, Spicy Peanut Sauce, and Sweet and Sour Sauce. I’ve included my favorite recipes for each.
Ginger Orange Sauce
Whisk juice, cilantro, ginger, garlic, soy sauce, sesame oil, and pepper flakes together.
Pour the mixture into a medium sized skillet and bring to a boil. Reduce heat to medium and simmer until the sauce has thickened slightly.
Let cool, then serve in a small dipping bowl.
Sweet Chili Sauce
1 (7oz) bottle hot chili sauce with garlic
1/2 cup water
1/2 cup rice wine vinegar
1/4 cup sugar
1/4 cup lemon juice
2 tablespoons chili paste
Blend together all ingredients in a small bowl. Chill until ready to serve.
Spicy Peanut Sauce
2 Tbsp finely chopped garlic
1/2 cup smooth peanut butter
1/2 cup soy sauce
1 tsp sugar
1 Tbsp rice vinegar
1 Tbsp hot chile oil
1/2 cup cilantro leaves, chopped finely
Combine ingredients in a small bowl, then whisk until smooth. Add cilantro just before serving.
Sweet and Sour Sauce
2 cups water
1 1/2 cups white sugar
1 cup ketchup
1 (8 oz) can pineapple tidbits with juice
2/3 cup distilled white vinegar
1 tsp red pepper flakes
1 Tbsp soy sauce
1/2 Tbsp steak sauce
1/2 Tbsp cayenne pepper hot sauce
3 Tbsp cornstarch
Stir all of the ingredients except the cornstarch together in a medium saucepan over medium heat.
Remove 1/2 cup of the sauce and whisk it together with the cornstarch in a small bowl.
Bring the sauce in the saucepan to a boil, then stir in the sauce/cornstarch into the boiling sauce.
Cook, stirring occasionally, until sauce has thickened (about 15 minutes).
Remove from heat and allow to cool slightly before serving.

I make a luscious Shrimp roll dipping sauce with just 2 ingredients- Lemon curd and white wine vinegar: Add just enough white vinegar to make the lemon curd saucy, enjoy!
That ginger orange sauce is so good, egg rolls always need a good sauce!
