These easy mini cherry cheesecake bites are so delicious and so simple to make!
Easy Mini Cherry Cheesecake Bites Recipe
Ingredients ~
Cheesecake Filling:
- 2 packages (8 ounces) cream cheese, softened to room temperature
- 3/4 cup white granulated sugar
- 2 eggs
- 1 Tbsp vanilla extract
- 1 Tbsp lemon juice
- Cherry pie filling or topping (1 can)
Crust:
- 1 1/2 cups graham cracker crumbs
- 6 Tbsp butter or margarine
- 8 Tbsp sugar
Directions ~
Line your pan with miniature paper liners. I use this type of pan and these liners.
Mix graham cracker crumbs, butter and 8 Tbsp of sugar together. Press 1 tsp of mixture into the bottom of the paper liners.
In a mixing bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla. It should be light and creamy without any lumps. Spoon mixture into paper liners, almost filling them.
Bake at 350° F for 15 minutes.
Let cheesecakes cool completely, then top with a teaspoonful of cherry pie filling.

I love mini cheesecakes so much! My mom taught me how to make them when I was young and I remember making them for every school event I had! haha! My little secret was that I used Nilla Wafers for the crust 😉 I just placed a wafer in the bottom of each liner.

I just made these. It doesn’t say when to mix the lemon juice in though so I accidentally left it out completely. Hopefully they will still taste good!
Thanks for the excellent recipe!!! I have made these in the past but this recipe blows the others out of the water!!!!! I added the lemon juice in with cream cheese mixture and it just makes it that much better 🙂

i dont have a little muffin pan. Can I cook them the same in a normal muffin pan?
Sure – I would probably bake them for an extra few minutes since the cheesecake will be a little thicker. 🙂
When you say “white sugar” in the filling ingredients do you mean white confectioners powdered sugar or plain white granulated sugar? Trying to make these this afternoon and don’t want to mess up!! Thanks!!

I’ve made them again since the original recipe (and also based on other people’s input), I’d say this should make at least 2 pans of 24 mini-cheesecakes and some or all of a 3rd pan of 24 depending on how thick you make them.

Definitely. When we make them, we always keep them in the fridge and eat them over the next few days. 🙂
I made these today and they turned great! One problem though…I have a huge amount of crust leftover. I measured the amounts exactly according to the directions. What do you do with all of this leftover crust? I think maybe the crust measurements should be reduced by half.

Hi Mickey…Love the recipe but I just wanted to say, I used 1tsp of crumbs instead of the 1/2 tsp you called for and still had a lot more crumbs than filling…lol…wonder if I did something wrong, but followed the recipe to the letter…they were delicious though! Thank you and Happy Holidays!1

Oh yum , I love cheesecake. These are so easy to make and you can use peach or strawberry instead of cherry. You can also just put a Vanilla wafer in the bottom – save the step of crumbling the graham crackers. You could also use chocolate graham crackers too
