Meat-less Vegetarian Loaf
Ingredients:
- 1 (24 ounce) package low-fat cottage cheese
- 2 eggs, beaten
- 1/4 cup vegetable oil or applesauce
- 1 envelope dry meatloaf mix
- 4 cups crushed cereal (any type of corn flake/total cereal. I like Special K from Kellogg’s)
- chopped vegetables (1 green pepper, 1 tomato, 1medium onion)
- 1 small can Tomato Paste
- 1 large can Tomato Sauce
Directions:
- Mix all ingredients except tomato sauce in large mixing bowl.
- Spoon into loaf or casserole pan lightly sprayed with non-stick cooking spray. (I find that it’s harder to get the middle cooked without drying the edges in a loaf pan, so I prefer to spread it out in a casserole dish.)
- Pour tomato sauce over the top of the loaf, completely covering it all the way to the edges of the dish.
- Cook uncovered for 1 hour at 350 degrees.
- Allow to cool before serving.
* The first serving is not very firm, but still tastes perfect. 🙂 Once the Meat-less Loaf has had time to set in the refrigerator, it firms up and resembles a typical meatloaf in appearance and can be sliced.
I have always wanted to learn how to cook. When I was in college, I became friends with a small group of people who attended a culinary school in the same city. They would host huge dinners once a month and make all of this amazing food. I still remember how impressed I was with their abilities and have always dreamed of being able to cook like that.
Obviously, I didn’t go to culinary school and won’t ever even get close to that level of skill, but I am working on getting better. I want to be more comfortable in the kitchen. More comfortable with new foods, new recipes and even with more professional equipment. As I’ve begun to add nicer cookware, bakeware and cutlery to my collection, I already feel like there’s a difference in my cooking.
I thought I’d share one of my favorite recipes with you. It’s got some great chopped vegetables in it, so it was the perfect recipe to show off my new chopping skills. I’m finally using a proper professional knife from Chicago Cutlery and it makes such a difference in chopping. The knife fits in my hand perfectly and comfortably and just slices and chops through vegetables so easily.

Even tomatoes are sliced perfectly and not crushed at all. I never had tomatoes that looked this nice with my old knife!
This recipe is so easy! I just chop my favorite veggies up, then add everything together in the mixer.
Once mixed well, spoon into a casserole or loaf pan and top with tomato sauce.
After cooking, let cool and then serve with a small salad or bread. My family LOVES this Meat-less Loaf. It’s the only version we make.
