I definitely would never consider myself a great cook. But as I’ve gotten comfortable in the kitchen over the last few years, I’ve started to branch out a little. Instead of serving the same recipes to my family over and over, I like to change things up a little.
I’ll add a few extra ingredients to a favorite recipe or even change a few ingredients out with others to see how we like it. It’s always fun to put a spin on an old favorite and discover an amazing new combination of flavors.
Summer is almost here and I’ve already started thinking about back-yard cookouts. This year, instead of my old potato salad recipe, I’m going to liven things up a bit.

Amazing Kale & Apple Potato Salad
PREP TIME: 20 min. | MAKES: 10 servings – 1/2 cup serving size
3/4 cup Mayonnaise Dressing
1 Tbsp. Dijon Mustard
2 tsp. cider vinegar
2 lb. new red potatoes, cut in quarters, cooked & cooled
4 cups coarsely chopped kale
1/2 cup thinly sliced red onion
2 apples, cored and diced
1. Mix dressing, mustard and vinegar until blended.
2. Combine remaining ingredients in large bowl; Add dressing mixture & mix lightly.
3. Refrigerate several hours or until chilled.
4. Optional: Sprinkle with poppy seeds or diced, cooked bacon, if desired.
This wonderful Kale & Apple Potato Salad is going to really liven up our cookouts and meals this summer. It has the perfect blend of comfort food with an added kick of flavor..
