I love summer!
The kids are tracked out of school and we get to enjoy spending time together. Whether we’re visiting the farmer’s market on the weekends, heading to the pool in the afternoons, or enjoying a hike and a picnic in the hills, there’s no shortage of family memories to be made in the summer.
Summer is also a favorite season because of the delicious, fresh fruits and vegetables that we love. I’m always looking for fun new recipes for cook-outs, picnics and neighborhood pot-lucks.
Since we prefer lighter meals in the warm weather, I love to make light desserts using fresh, juicy fruit. These fresh fruit skewers are easy to make, fun to eat, and the perfect dish to share with family and friends on the 4th of July!
4th of July American Flag Fruit Skewers
Ingredients
14 wooden bamboo skewers
12 ounces raspberries
6 ounces blueberries
1 bag small marshmallows
Directions
– Rinse and dry berries.
– Alternate raspberries and mini-marshmallows on 8 skewers. I found that the marshmallows slide along the skewers more easily if the skewers are wet.
– On the remaining 6 skewers, alternate raspberries and marshmallows about halfway, then alternate blueberries and marshmallows.
– Arrange the skewers on a serving platter so that the design resembles the American flag.
Keep refrigerated until serving.
