It’s almost that time of year!
Everyone is looking forward to getting together with family and friends to cheer on their favorite team. Whether you plan to head out to tailgating events this football season or prefer to watch with friends at home, game day always means good food!
We’ve got a couple of great recipes for tailgating for you to try this year – a Citrus Marinade that’s great for grilling out and Blueberry Orange Muffins that are great for preparing ahead and taking along on game day.
Blueberry Orange Muffins
Ingredients:
3 cups all-purpose unbleached flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon baking soda
1 cup Florida orange juice
2 eggs
½ cup unsalted butter, melted
1 cup blueberries, fresh or frozen
Cupcake liners
Directions:
Preheat oven to 375° F. In large mixing bowl, sift together flour, sugar, baking powder, salt and baking soda. In second mixing bowl, whisk together orange juice, eggs and melted butter. Add the orange juice mixture to the flour mixture; stir just until combined. Gently fold in blueberries. Line muffin pan with cupcake liners; fill two-thirds full with batter. Bake for 20 minutes or until a toothpick inserted in center comes out clean. Remove muffins to wire rack to cool.
Florida Orange Marinade

Ingredients:
¼ cup Orange Juice
1T lime juice
1T jerk seasoning
1t ginger, minced
Directions:
Combine all ingredients in bowl, mix thoroughly.
Pour marinade over chicken skewers, cover and refrigerate at least three hours or preferably overnight.
Cook chicken skewers on grill as desired.
Enjoy!.

I think hot dogs are all ya need.. hahaha!
We love love love our mini hamburger sliders and anything that has bacon, Bacon will do even by itself lol

Those muffins look great, and I bet that marinade would also be great over tofu (we don’t eat meat).

I have to be careful of orange juice because of the acid content, but those blueberry muffins sound too good not to try.
