Basil Shrimp Salad Recipe
Ingredients
12 medium or 9 large shrimp
1/4 cup white wine vinegar
1 tsp Greek extra-virgin olive oil
1 TBsp Lemon Juice
1/8 cup chopped fresh basil (or 1 tsp dried basil)
Directions
Whisk together vinegar, olive oil, lemon juice and basil together in a bowl. Place shrimp in a dish and marinate with the basil marinade mixture for at least 30 minutes (or overnight for more flavor).
Grill shrimp until cooked through.
Place grilled shrimp on top of romaine lettuce. Add croutons if desired.
Enjoy!
