Cheese and Bacon Stuffed Mushrooms – Holiday Entertaining
It’s the most wonderful time of the year!
The holiday season brings so many wonderful traditions and customs that make our home a warmer and happier place. We start a month before Christmas and love taking our time getting everything ready.
It’s hard to choose my favorite thing about the holiday season. Spending time with family and friends that I haven’t seen in a while. Making wish lists with the kids and writing letters to Santa. Listening to happy Christmas songs and beautiful holiday hymns.
And, of course, the food.
I love to cook and bake year-round, but my favorite recipes are always saved for the holidays. When we have loved ones and friends dropping by to visit, I love to serve them our absolute favorite foods.
Some of my recipes take hours to prepare and make, while others are easy but delicious.
The most popular recipe I make is one of the simplest I have ever made. Year after year, I’m asked for the recipe when I serve it and everyone is surprised when they find out how simple they are to make.
Here is one of our all-time favorite recipes – I hope you love it as much as we do!
Cheese and Bacon Stuffed Mushrooms
12 large fresh mushrooms (about 12 ounces)
4 slices bacon, cooked and crumbled
1/3 cup Real California Milk Organic Monterey Jack
1/3 cup Real California Milk Organic Mozzarella Shredded Cheese
1/3 cup Real California Milk Organic Sharp Cheddar Shredded Cheese
1/3 cup shredded cheese mixture (jack, cheddar, and mozzarella)
1/2 cup diced onion (about 1/3 of an onion)
3 cloves garlic minced
2 pieces of toasted bread diced into small pieces
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1 tablespoon fresh chopped parsley
Preheat oven to 350 F.
In a medium skillet or pan, heat one teaspoon of olive oil over medium-high heat until hot. Add diced onion and minced garlic. Sauté for 5 to 7 minutes, stirring frequently, until the onions are browning and crisping. Remove the pan from heat.
Add sautéed onions and garlic to a large mixing bowl. Add 1/3 cup Monterey Jack, 1/3 cup Sharp Cheddar, 1/3 cup Mozzerella shredded cheeses, toast pieces, salt, and pepper to the mixing bowl, then stir until well-mixed. Fold in the crumbled bacon.
Stuff the mushrooms with the mixture. Place the stuffed mushrooms on a baking pan, then bake at 350 F until they are cooked, about 15 minutes. Remove the mushrooms from the oven, and sprinkle with the mixed shredded cheese and parsley.
