If your house is anything like mine, there just isn’t enough time in the day.
Whether it’s the piles of laundry, the sticky floors to clean or work that’s been piling up, it seems like there are always so many tasks waiting for me. And with 2 young daughters at different school campuses, 4 carpools, homework and a toddler who wants to play with Mommy all day, I don’t have much time for those tasks.
So I’m always looking for great ways to save time and energy in my day. And I’ve got a few great ideas to share with you!
The first is a super easy, super fast recipe. It’s nutritious, delicious and always a hit with my family.
Easy Vegetable and Cheese Frittata
Ingredients
• 12 eggs
• 1/4 cup Sour Cream
• 1/4 cup milk
• 1 Tablespoon of butter
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 1 cup shredded mozzarella cheese
• 1/2 cup sliced mushrooms
• 1 cup chopped vegetables of choice (tomato, onion, red pepper, green pepper)
• 1 Tbsp dried basil
Instructions
1. Preheat oven to 350°F. Coat deep dish glass pie plate or stoneware dish with nonstick cooking spray.
2. Melt butter in a medium skillet or frying pan over medium heat. Add mushrooms, onion and peppers; saute until tender.
3. While the vegetables are cooking, whisk together eggs, milk, sour cream, cheese, basil, salt and pepper in a medium bowl.
4. Combine vegetables and egg mixture in stoneware dish.
5. Bake for 40 to 45 minutes, or until eggs are set and lightly golden brown.
6. Garnish with remaining sprinkle of basil and shredded Parmesan cheese if desired.
7. Divide into small wedges, then serve with fruit or salad.
