Even though it’s only October, I’ve already started thinking about holiday entertaining. It seems like no matter how early I start planning, I still never feel truly prepared for the holidays. This year, instead of planning every event to the last detail, I’m determined to be more laid back about entertaining. I’ll have some easy but delicious recipes ready when guests drop by – with the emphasis on easy.
This Goat Cheese and Strawberry Pepper Jelly Pastry Puff Bites recipe is exactly that – easy. The bites are made from only 3 ingredients, but come together in the most wonderful combination of sweet and a tiny bit of heat. They’re perfect for holiday entertaining as appetizers at formal parties or just yummy little snacks for visiting guests.
Goat Cheese and Strawberry Pepper Jelly Pastry Puff Bites Recipe
INGREDIENTS
4 oz goat cheese, softened
2 frozen sheets of puff pastry (14 oz), thawed
1 jar Smucker’s Fruit & Honey Strawberry Jalapeño Fruit Spread
DIRECTIONS
Defrost puff pastry.
Spread puff pastry sheets out on a work surface coated lightly with flour.
Use a round cookie cutter or a small drinking glass to cut circles out of the pastry dough.
Place the pastry circles on a baking sheet lined with parchment paper, then bake in a pre-heated oven according to package directions.
Once baked, cut a circle from the top of each pastry, then scoop a small ball of goat cheese into the pastry.
Place the baking sheet back into the over for a minute to warm and soften the cheese.
Remove the pastry puffs from the oven and spoon Strawberry & Jalapeno Fruit Spread on top of each pastry.
Garnish with a mint leaf if desired.
