Simple Chicken Alfredo Recipe
It seems like I’ve been noticing more and more recently how busy we are. As the kids get older, we seem to become much, much busier. I remember thinking when they were little that when the kids got older and became more independent, that I’d have more free time. But between school, homework, sports, and each one now getting their own little social circle, we seem to be constantly on the go all day, every day.
One thing that always seems to bring us back together each day is dinnertime – the one time where all five of us get to gather around the table and talk to each other – sometimes for the first time that day.
Every night we all stop what we are doing, put away the distractions, and enjoy dinnertime together – even if just for an hour. It is always my job to put something fantastic on the table – so having something that is easy to make and still tastes delicious is imperative. Often times I am running through the store to grab dinner on the way home. This week I stopped by and grabbed just five ingredients and served the perfect meal in just a few minutes.
Although I love making my own sauces, I don’t always have the time for home made. When we’ve had a busy day and I want to get a hearty, warm meal on the table, I am happy to use store-bought sauces and mixes. I can add in my favorite meat or veggies if I want, serve over pasta and voila! Dinner is served. This week I wanted to surprise everyone with a little something different – so I went with a Classic Alfredo – it was delicious.
A tradition we began long ago at dinnertime was to play “peak and pit” – the best and the worst part of your day. We take turns going around the table and everyone gets a chance to talk about the “peak” of their day, and the “pit” of their day. It has been fun to listen to these “peaks and pits” evolve as the kids get older. It also gives us a chance as parents to stay in tune with all that is going on with our kids – even with as busy as we all are these days.

Simple Chicken Alfredo Recipe
Ingredients:
• 3 Chicken breast, trimmed and cut in to strips
• 2 tbsp Olive oil
• 2 tsp Garlic salt
• 3 cups Pasta of choice (we love penne!)
• 1 jar Classic Alfredo sauce
Directions:
1. Heat olive oil over medium high in a deep frying pan.
2. Add in chicken strips and garlic salt and cook until chicken is cooked through and begins to brown. It is ok for the bottom of the pan to caramelize some – this make it even more flavorful.
3. While this is cooking, prepare your pasta according to the directions on the packaging.
4. Once the chicken is done, reduce heat to low and mix in the Classic Alfredo. Stir gently – getting all of the yumminess from the bottom of the pan.
5. Let simmer on low for 10 minutes. Serve over your favorite pasta.
