My family loves pasta.
It’s something that I love to make because it’s so easy and versatile. I can make a light summer pasta salad or a rich, hearty pasta dinner, depending on what we’re in the mood for.
The family loves the variety of choices and delicious taste of all of our family favorite pasta dishes.
We’ve been trying to make our meals healthier when possible here lately. If I can make a few ingredient changes to lighten the recipe a little, I love to give it a try.
For our pasta, that’s really easy – we just use Dreamfields Pasta. Dreamfields is a a high-protein and high-fiber pasta that tastes just like traditional pasta, but is one I feel much better about serving to my family.
This is a delicious twist on an old favorite. The pumpkin and zucchini purées bring hints of wonderful flavor in the spaghetti sauce that are so interesting and wonderful. My friends and family love this recipe and always comment about the flavor.
ITALIAN VEGGIE SPAGHETTI SAUCE
Preparation Time: 20 minutes
Cook Time: 25 minutes
Ingredients
1 box Dreamfields Spaghetti
2 tablespoons olive oil
1 pound lean ground beef (90% lean)
1 large onion, diced
3 cups mushrooms, sliced
1 green bell pepper, diced
1 can (14 1/2 ounces) diced tomatoes with basil, garlic and oregano, undrained
2 cans (8 ounces each) no-salt-added tomato sauce
1 can (6 ounces) tomato paste
1 cup pumpkin purée
1 cup puréed zucchini
1 tablespoon sugar
1 teaspoon salt (optional)
Pepper
4 ounces fresh basil (optional)
Directions:
1. Heat 1 tablespoon of the oil in medium skillet over medium heat until hot. Add ground beef; cook 5 to 8 minutes or until beef is browned and cooked through, stirring occasionally and breaking into crumbles. Drain; set aside.
2. Heat remaining 1 tablespoon oil in large saucepan over medium heat until hot. Add onion; cook 10 minutes or until translucent, stirring occasionally. Stir in mushrooms and bell pepper; cook about 5 minutes or until fork-tender. Add tomatoes, tomato sauce, tomato paste, pumpkin, zucchini, sugar, ground beef, salt, and pepper, as desired; stir until combined. Reduce heat; simmer 1 hour, stirring occasionally.
3. Cook pasta according to package directions. Place pasta in large bowl; set aside.
4. Top pasta with beef mixture. Garnish with fresh basil, if desired.
Makes 6 servings.
Nutrition information (1/6 of recipe): 480 calories; 27 g protein; 70 g carbohydrates; 12 g total fat; 3 g saturated fat; 45 mg cholesterol; 590 mg sodium; 10 g total dietary fiber.
