In our house, there are a few favorite dishes that we love to make during different times of the year. In the Spring, I usually love to make my meatless loaf or a casserole with a light salad. But after the huge storms that came through last week, it’s cold again! The temperature dropped back down to the 40s and 50s, so I decided to turn the heat back on and make something warm and filling for the cold day
I chose my yummy Chunky Cheesy Potato Soup. It’s easy to make and so warm and good on a chilly day!
Chunky Cheesy Potato Soup Recipe
Makes 8 servings
Ingredients
2 pounds cubed potatoes (can be shredded for less chunky soup)
6 cups water
1/2 lb Velveeta® cheese, cubed
1/4 cup chopped onion, or to taste
3 cubes chicken bouillon
1 teaspoon chopped fresh parsley
1/2 teaspoon ground black pepper
1/4 tsp Garlic powder
Directions
1. Combine water, onions, bouillon, parsley, pepper, and garlic powder in a large pot.
2. Bring to a boil over high heat.
3. Add potatoes and boil for another 3-4 minutes.
4. Reduce heat to medium-low; add Velveeta®.*
5. Cover and simmer until the potatoes are tender, about 30 minutes.
(* I don’t normally stir the soup completely, other than to move the soup off the bottom of the pot periodically. I love having the Velveeta swirling through the soup – it looks pretty and gives nice extra-cheesy bites throughout the soup.)
So simple! It’s one of our favorite meals on cold winter days and it was the perfect dinner the other night when the weather turned cold so suddenly. The delicious taste of thick potato soup with a hint of garlic and our favorite Velveeta® cheese – mmmmmmm!

We love potato soup at my house!! I also add chopped long green chilis in mine and then when I serve it, I put some shredded jack cheese and bacon bits on top. yummy!!

No question – this soup looks really yummy – and reading the ingredients – I KNOW it will taste Good. I think maybe I’d add a few thinly sliced green onions (or chives) to add a little more color and flavor. I’m also thinking for another variation I might try adding some roasted garlic and rosemary (preferaby a sprig of fresh you can remove at the end of cooking.)

This soup looks amazing. I haven’t Velveeta in years, and when I buy it, I start snacking on it… and snacking… until I don’t have enough for the recipe!!! I must get two packages of Velveeta, to make sure I have enough for the soup! I love that it doesn’t take that long, either. It is still cold enough to want something this comforting and hot for your tummy!
