Fall is here! That probably means different things to different people, depending on where you live.
For us, it means warm days to enjoy outside. The oppressive heat and humidity of the summer has ended and we can really enjoy spending time outdoors. For that reason, we seem to have a lot more town gatherings and small street parties now that the weather is nicer.
After all of the summer cookouts and a few of the fall potluck-type celebrations, I’ve ended up with a recipe that is now my go-to dish for shared celebrations.
I whipped it up a couple of months ago for a last minute get-together and have been asked for it so many times, that I’ve now started making it every time we have a potluck.
It’s easy to make and has been a huge hit with everyone who’s tried it.
Sweet & Spicy Honey Chipotle Shrimp & Pineapple Kabobs
Ingredients
1 pkg SeaPak Butterfly Shrimp
½ fresh pineapple
2 dried chipotle chili peppers, stemmed and seeded
1 Ripe tomato, quartered
1/2 small yellow onion, peeled and sliced
1 clove garlic, peeled
1/2 cup water
1 teaspoon salt
1/2 cup honey
1 tablespoon red wine vinegar
Directions:
- Prepare shrimp according to box instructions.
- Cut fresh pineapple into chunks, then set aside.
- To prepare the dipping sauce, combine the chilies, tomato, onion, garlic, water and salt in a small saucepan, then bring to a boil.
- Reduce the heat to low, then cover and simmer until the ingredients soften and the mixture thickens (about 15 minutes).
- Remove from the heat and let cool slightly, then spoon into a blender and puree until smooth. Pour the puree into a small bowl and stir in the honey and vinegar.
- Slide shrimp and pineapple chunks on kabob sticks, alternating the pieces.
- Drizzle sauce along the kabobs or serve at room temperature as a dipping sauce.
