April is National Soyfoods Month, so it’s the perfect time to share one of my favorite soyfoods recipes with you. Many of my friends don’t realize how easy it is to cook with soyfoods, whether it’s for Meatless Monday, for Lent, or just to make healthier meals for the family.
Almost any of your favorite family recipes can be made with soyfoods, in fact. There are so many different, delicious soyfoods options that it’s easy to find a great meatless substitution for whatever the recipe calls for. Whether you need ground beef, chicken, milk, sausage or other popular meat and dairy products, there are soyfoods that would work perfectly in your favorite meals.
We make #soyswaps meals so often, the kids never realize when we’re eating meatless. I make tacos, lasagna, spaghetti, meatloaf and even sweet and sour pork – all with soyfoods instead of the meat originally called for in the recipe. The result is delicious and healthier meals that the family loves.
Here is one of our all-time favorites – our Vegetarian Three Bean Easy Chili Recipe. It’s super easy to make and always a huge hit at cookouts and family get-togethers.
Vegetarian Three Bean Easy Chili Recipe
(Makes 6 – 8 servings)
Ingredients
1 (12 oz) package frozen Morningstar Farms Grillers Crumbles
2 (15 oz) cans black beans, rinsed and drained
2 (15 oz) cans dark red kidney beans
1 (15 oz) can light red kidney beans
1 (29 oz) can diced tomatoes
1 (12 fluid oz) can tomato juice
1 small onion, chopped
3 tablespoons chili powder
1 tablespoon garlic powder
2 bay leaves
salt and pepper to taste
Directions
1. In a large pot, combine black beans, kidney beans, diced tomatoes, tomato juice, chopped onion, chili powder, garlic powder, bay leaves, salt and pepper.
2. Bring to a simmer and cover. Simmer for 45 minutes.
3. Add Morningstar Farms Grillers Crumbles and re-cover. Simmer for another 15 minutes.
4. Add shredded cheese and sour cream as toppings before serving, if desired.
