Let me tell you more about myself. I live in Chicago with my Bichon Frise, Joey. When I am not indulging in one of my many shows on Netflix or reading at the local coffee shop, I am cooking or baking one of my recipes or something new from Pinterest.
If you live in the Midwest like me, you know that winter is definitely here. I’ve unpacked my winter jackets from the basement and I’m going to work all bundled up. But, winter can only mean one thing—holiday season is here! And you know the holidays mean family, friends and (of course) food. Nothing gets me more excited for spending time with family than enjoying delicious food at the table. For this time of the year, I have a very easy winter fruit pie recipe for you.
Last weekend I hosted a dinner party with my friends and brought this pie over. I must say, it was quite a hit! Hope you enjoy this recipe as much as I do. Happy baking!

Winter Fruit Pie Recipe

Ingredients
.
Meringue Topping
• 2 eggs whites
• 4 tablespoons sugar
• ½ teaspoon vanilla extract
Fruit Filling
• 1/2 cup dried figs; stemmed
• 1 ½ cup cranberries
• 4 small apples; peeled, cored and sliced
• 4 pears; peeled, cored, and sliced
• 1/2 cup sugar
• 2 tablespoons cornstarch

Directions

- Preheat the oven to 375° F.
- To make the meringue topping start by beating the egg whites until frothy.
- Gradually add in the sugar, continuing to beat until stiff.
- Combine vanilla extract. Set aside.
- Boil figs and cranberries in 1 cup of water for 5 minutes. Drain and set aside until cool enough to handle.
- Slice fig into 5 pieces and put slices in a large bowl. Add the apples, pears, and boiled cranberries. In a small bowl mix the sugar and cornstarch
- Add cornstarch-sugar mixture to the fruit and gently toss until evenly coated.
- Pour fruit filling into the pastry shell and add the meringue topping. Bake in the lower third of the oven for 1 hour.
