It’s almost that time of year again – cookie time! Whether I’m exchanging cookies with the other playgroup moms, making cookies for Santa or baking treats for the school bake sale, ’tis the season for cookies!
This year, instead of searching for lots of different cookie recipes for the different events, I have the perfect recipe for them all – one recipe that can be used for dozens of different cookies.
I have no idea why no one ever thought of this before – it’s brilliant! It’s literally the only cookie recipe I’ll ever need because by adding “mix-ins”, this one simple recipe can make hundreds of different types of cookies. I love it!
This recipe is an easy and delicious cookie recipe that let you add 1-2 cups of your favorite mix-ins to make it perfectly, uniquely yours!
For my first batch, I chose to mix in butterscotch and chocolate chips for my cookies – and they turned out absolutely delicious! So delicious, in fact, that I’ll soon be making another batch… since my family quickly demolished the first cookies. These chocolate butterscotch cookies not only tasted great, but they look so pretty I think they will be a perfect gift to wrap up for my holiday gift giving this year.
Chocolate and Butterscotch Chip Cookies
Ingredients
1 cup butter
¾ cup packed brown sugar
¾ cup granulated sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups all-purpose flour
1 tsp. baking powder
¾ tsp. salt
¼ tsp. baking soda
1 cup of chocolate chips
1 cup of butterscotch chips
Directions
Preheat oven to 375°. Mix brown sugar, granulated sugar, butter, egg, egg yolk and vanilla in a large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended (dough will be soft and creamy).
Add chocolate chip and butterscotch chip mix-ins into the dough until every spoonful of dough has some of the delicious mix-ins.
Drop dough by rounded tablespoonfuls onto ungreased baking sheets 3-inches apart. Bake 10 to 12 minutes until edges are lightly golden. Cool 1 minute on wire rack; remove from baking sheets and cool completely.
