Now that I’m a mom, it’s so interesting for me to look back at my childhood. I knew that mother was a good mom, of course, but I now realize how much I took for granted. Whether it was letting us help make dinner, working on crafts with us at the kitchen table, or shuffling us daily to sports practices, music lessons and playdates, she was constantly doing nice things for my siblings and me.
Even now, when my husband and I take the kids to visit my parents’ house, I see her love for her family. She’ll still get down on the floor with my kids and play with them for hours, and always has a Little Debbie® treat for each of them hidden in her pantry.
My mother makes holidays special for us all too. No matter whether it’s a “kid” holiday or not, she’ll turn it into a special occasion to celebrate children. For Mother’s Day, she’d rather spend time with her kids and grandkids making a craft or a dessert than to receive something as a gift.
I love to see how much she means to my kids and to see how much we all mean to her.
With Mother’s Day coming up, I decided to make a dessert with my kids in honor of my mother. It had to be a sweet treat that she would love, but easy enough for the kids to help make. My kids helped me decide what to make and were thrilled to be able to help me make it. I hope your family enjoys it too!
Easy Cosmic Brownie Ice Cream Cake Recipe
Ingredients
1.5 cups finely crushed graham crackers (24 squares)
1/3 cup butter, melted
3 tablespoons sugar
One (2 quart) container of vanilla ice cream, softened
1 box Little Debbie® Cosmic Brownies, cut into small pieces
One 12oz container whipped topping
Sprinkles or decorations
Instructions
Add graham cracker, melted butter and sugar to a small bowl. Still ingredients until well mixed, then spoon the mixture into the bottom of a casserole dish. Press the mixture down with a spoon to create a solid crust.
Spoon softened ice cream onto the top of the crust, then spread with a spoon to smooth it all the way to the edges. (To soften, microwave the entire ice cream container for 30 seconds at a time on defrost until soft enough to spoon and spread over the crust.)
Sprinkle the pieces of Cosmic Brownies across the top of the ice cream, making sure to cover most areas evenly.
Spoon the whipped topping over the top of the Cosmic Brownies and smooth with a spatula or spoon. Add toppings if desired, then move ice cream cake to the freezer. Freeze for several hours so the cake is completely frozen before slicing and serving.
