This time of year my favorite kitchen appliance is by far my slow cooker. With Fall Festivities in full swing, it seems like most days we are leaving the house before dawn – only to return after dark. I love it when we walk in and are met with the amazing smells of what has been cooking for us all day long.
One of my family’s favorites year round is a super simple – yet super delicious – Slow Cooker Pork Carnitas.
With ingredients that I always have on hand, I can quickly throw everything into my slowcooker as I am leaving in the morning – and return home to a delicious, filling meal. Plus everyone can top their carnitas with whatever they want – making everyone happy! It does not get much better than that.
The secret to perfect Slow Cooker Pork Carnitas starts with having the perfect cut of pork. Smithfield All Natural pork products have no artificial ingredients or preservatives and are available at your local Walmart. This I knew this week was going to be particularly busy I dropped in to Walmart to grab a little pork tenderloin to surprise the family with their favorite slow cooker pork carnitas.
Slow Cooker Pork Carnitas
Ingredients:
• Smithfield All Natural Pork Tenderloin
• 1 tablespoon chili powder
• 1 teaspoon cumin
• 1 teaspoon oregano leaves
• 1 teaspoon black pepper
• 1 teaspoon salt
• 2 teaspoon minced garlic
• 1 cup orange juice
• ¼ cup lime juice
Directions:
Begin by mixing chili powder, cumin, oregano leaves, pepper and salt together in a bowl. This will make a great dry rub that you want to then run in to your Smithfield All Natural Pork Tenderloin.
In your slow cooker add in orange juice, lime juice and minced garlic and stir. Place tenderloin in to slowcooker. Cover and cook on low for 8 hours or on high for 5 hours.
Remove meat from slow cooker and let “rest” about five minutes, leaving juices in slowcooker. Then using two forks, shred entire tenderloin. This will literally only take seconds because the Smithfield All Natural Tenderloin is so tender. Put shredded pork back in to slowcooker juices and let cook another 30 minutes on low. Spoon meat on to your favorite tortillas, rice, salad – however you want to enjoy it!
Slow Cooker Pork Carnitas are absolutely delicious – and if you have any leftover, it saves beautifully in the refrigerator and can be warmed in the microwave for a quick and easy lunch!

We LOVE Carnitas! When I visit my son and DIL, I often put carnitas in the crock pot before I leave so that they have dinner done that evening.
