I don’t know if it’s the college I went to or the courses I took or just random luck, but I had a LOT of friends in college who were vegetarians. I hadn’t known many vegetarians before then, so it was interesting to me to see what they’d eat when we were at restaurants or at other people’s houses. It was a great way for me to learn about trying new foods and all of those cooking tips and recipes come in handy now for family meals.
I wanted to share one of my favorite recipes since that time – Sweet and Sour Tofu. It’s an easy recipe that everyone in the family loves, so it’s perfect for Meatless Mondays or an easy family dinner during the week. I hope you love it as much as we do!
Sweet and Sour Tofu Recipe
Ingredients
½ 12 oz pkg. firm House Foods tofu
1 medium green bell pepper, cut into strips
½ white onion, cut into strips
1 (8-oz.) can pineapple chunks or tidbits, undrained
1 bottle of sweet and sour sauce
Instructions
1. Cut tofu in half and place each half between 2 paper towels. Gently press the paper towels together to remove any excess liquid in the tofu. Cut the tofu into small bite-size cubes.
2. Fry the tofu cubes in vegetable oil or sesame oil on medium-high heat in a non-stick skillet. Turn the pieces as they fry until each side is golden brown (about 5-8 minutes). Remove the tofu and set aside.
3. Add bell pepper slices, onion slices and pineapple with juice to same skillet. Bring to a boil then immediately reduce heat and cover. Let simmer for 7 to 10 minutes or until onion is tender and liquid has been reduced.
4. Add the cooked tofu back in, along with the sweet and sour sauce. Stir gently to combine, then cover again. Cook for a minute or two until the sauce is bubbly and thickened.
5. Serve over or with white rice.

I love finding easy ways to incorporate protein into my family’s diet.
