The summer after I graduated high school, before heading off to college I spent a few weeks with a friend of mine in the outskirts of Milwaukee Wisconsin. To this day I can still remember how breathtakingly beautiful the land was – miles and miles of farm land like I had never seen before! I remember my friend being especially excited that we were home for the Cheese Curd Festival so she could introduce me to “how all cheese should taste.” I admit – I didn’t understand what the big deal was… that is until I tasted it. It is true what they say – there is simply nothing like Wisconsin Cheese.

My grandmother’s macaroni and cheese recipe has always been a hit, so I’ll be making it again this year with our favorite cheeses from Great Midwest Cheese. I wanted to share it with you and hope that you love it every bit as much as we do. Enjoy!
Homemade Mac and Cheese Recipe
Ingredients
1 (7oz) pkg. elbow ready-cut macaroni
2 cups small curd light cottage cheese
1 cup light sour cream
1 slightly beaten egg
¾ tsp. salt
Dash pepper
6 oz. Great Western Cheese mild cheddar (can use sharp if preferred)
2 oz. Great Western Cheese Colby jack
1 oz. Great Western Cheese swiss
Paprika
Preparation
Cook macaroni according to package directions; drain well.
Combine cottage cheese, sour cream, egg, salt and pepper.
Add shredded cheese, mixing well.
Stir in cooked macaroni.
Turn into a greased 9x9x2 inch baking dish.
Sprinkle with paprika.
Bake in 400 degree oven for 45 minutes, covered.
Test for doneness in middle. If not almost firm, uncover and cook for 15 minutes more or until done.
Serves 6 – 8

I’m from Wisconsin and visit a few times a year as I still have family there. We always have to purchase cheese to take back with us! I love the other ingredients in this mac and cheese, sounds very creamy.
