My kids all have different tastes in food. Two of my kids would choose veggie tacos for dinner over almost anything else. The other would rather eat sand. 🙂
We have a rule in our house about being respectful and polite during meals. If the kids eat their dinners pleasantly and without complaint during the week, they get to “pick” a dinner the next week. There are only a few things that everyone in the family really love, so it makes life easier when it’s picked for dinner.
Sweet corn is one of those few foods that everyone in the family loves. Whether it’s roasted on a grill, used in a recipe or just microwaved in plastic wrap, it’s always a hit with our family. And when we start to see fresh corn sold at the Farmer’s Market and fresh vegetable stands in town, we’re always excited to buy some.
Besides corn on the cob, my other two favorite corn recipes are Corn Muffins and Tomato and Sweet Corn Salsa. I thought I’d share the Salsa with you. Enjoy!
Tomato and Sweet Corn Salsa
• 4 ears fresh Supersweet corn, husked and cut in 2-inch pieces
• 2 cans (14-½ ounces each) Italian stewed tomatoes
• 1 teaspoon vegetable oil
• 2 teaspoons red-wine vinegar
• Salt and pepper
• Toasted Italian bread, sliced
• ¼ cup grated Parmesan cheese
• Pour stewed tomatoes into a large skillet and break up larger pieces with a spoon. Add oil and vinegar. Cover and bring to a simmer.
• Add corn, than cover and simmer until corn is tender (about 5 minutes) turning corn halfway through cooking. Add salt and pepper to taste.
• Top sliced bread pieces with salsa; sprinkle with the cheese. Garnish with chopped parsley, if desired.
