Yes, I know it sounds like a mouthful, right? And it is most certainly a mouthful of the best cookies you may have ever had the pleasure of introducing to your lovely little mouth. This recipe makes big, seriously decadent and delicious cookie creations. But enough small talk, let’s bake and make someone triumphal about being your friend or family member.
Chocolate Chip Peanut Butter Oatmeal Cookies
.
Ingredients:
Dry:
2 1/3 cup all-purpose flour
1/2 cup granulated sugar
1 cup firmly packed light brown sugar
1 1/2 cups rolled oats
2/3 cup almonds, sliced
1 teaspoon baking soda
1 teaspoon sea salt
12 ounces semisweet chocolate chips
Wet:
2 sticks unsalted butter softened
1 cup creamy peanut butter
1 1/2 tablespoons pure vanilla extract
2 large eggs
Directions:
Preheat oven to 350 degrees.
Prep: Line a cookie sheet with parchment paper
1. In a medium bowl add flour, baking powder and sea salt and mix with a fork, set aside.
2. In the bowl of a stand mixer fitted with the paddle attachment whip the softened butter until creamy (about 2 minutes).
3. Add the white and brown sugars and cream together.
4. Crack in your eggs one at a time fully incorporating the first egg before adding the second egg.
5. Add vanilla extract and peanut butter.
6. Fold in the oatmeal and chocolate chips.
7. With the stand mixer set to its lowest setting begin adding the flour mixture a little bit at a time until the flour mixture is fully incorporated into cookie dough.
8. Fill a 1/3 measuring cup with cookie dough and turn out into the palm of your hand, work the dough into a ball. Yes, these are big cookies.
9. Place cookies 3 inches apart on a cookie sheet. I was only able to get six cookies on a cookie sheet at a time. However if you like, make smaller cookies. But in my cookie addled mind, bigger cookies are so much better.
10. Bake cookies at 350 degrees for 20 minutes. Remove from oven and allow to cool.
11. Serve.
Tip: Dunk into milk or make ice cream cookie sandwiches.
Enjoy!
