Blue Velvet Cupcakes with Easy Vanilla Buttercream Frosting

I love baking. Cookies, cupcakes, cakes and more. Whether it’s for a special occasion to share with friends or just a fun dessert for the family, baking is something I’ve loved doing for as long as I can remember.

So I was more than happy to try a new fun cupcake recipe – Blue Velvet Cupcakes!

 

Blue Velvet Cupcakes #Recipe

Blue Velvet Cupcakes with Easy Vanilla Buttercream Frosting

Cupcake Ingredients

2 1/2 cups cake flour
1 1/2 cups sugar
1 Tbsp unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
2 large eggs at room temperature
1 1/4 cups vegetable oil
1 cup buttermilk at room temperature
1 Tbsp dark blue food coloring
1 tiny dab of violet gel food coloring
1 tsp vanilla extract
1 tsp white vinegar

Buttercream Frosting Ingredients

2 1/2 sticks unsalted butter at room temperature
2 1/2 cups confectioners sugar
1/4 tsp salt
1 Tbsp vanilla extract
2 Tbsp heavy cream

Directions

1. Preheat oven to 350° F. Spray a cupcake tin with non-stick spray or insert cupcake liners.
2. In a medium bowl, sift together the flour, sugar, cocoa powder, baking soda and salt. In a large bowl, combine the eggs, oil, buttermilk, food coloring, vanilla and vinegar. Whisk vigorously until well combined and smooth. Add the dry ingredients to the wet and whisk until smooth.
3. Spoon the batter into the cupcake tin, filling each hold about 3/4 full. Bake for 17-19 minutes or until the tops spring back when pressed on lightly with your fingertip and a toothpick inserted into the center comes out clean.
4. Transfer the pan to a wire rack and let the cupcakes cool for a few minutes. Then remove them from the pan to cool completely.
5. For the frosting, in a large bowl, mix the butter with an electric mixer for about 20 seconds. Add the confectioners sugar and salt and beat at low, then medium to incorporate the sugar. Scrape down the sides of the bowl as needed. Add the vanilla and heavy cream, then beat on medium speed until combined. Increase speed to medium-high and beat for about 4 minutes or until light and fluffy. Frost the cupcakes once they are completely cooled.

  1. I hate cleaning my cupcake pan because the batter that spills over seems to turn into concrete once it’s baked on and it’s really hard to scrub off.

  6. The worst is the dutch oven – it’s just so heavy and awkward to get clean… and re-seasoning it such a pain.  Thank goodness I learned to use the bbq grill so the house doesn’t smell like burnt oil for 5 days.

A toothbrush! It’s also great to get around rivets on pots and pans and lots of other little cracks and crannies!

  54. I HATE cleaning giant pots that barely fit in the sink. I use one and I’m like “… We need to find a new house now.”

  56. I hate cleaning the beaters for my mixer after making cookie dough or candy. 

  59. I hate to clean pizza pans the most because of the grease and also they do not fit into the sink very well so it is hard to soak them.

    We have a pretty small sink and hate cleaning large pans for sure! We always end up with a mess of water out of the sink!

  86. Usually our lasagna pan. Seems like the lasagna gets stuck on the bottom and is hard to clean.

  102. I have a Le Creuset grill pan. It was EXPENSIVE…. and I hate using it. It is darned near impossible getting all the crusted on gunk out of the thing.

  113. I hate cleaning wooden spoons and my crock pot.  The wooden spoons because they are not supposed to go into the dishwasher and I use them to make almost every meal and the crock pot because it is a beast and does not fit in the dishwasher.

  132. My worst cleaning job is the indoor grill, the ‘non stick” surface does stick.

All of them!  LOL.  Ok, seriously, I have really bad water in my condo, so most everything does not come out clean the first time.  I have literally had to rewash things four times.  I just bought some new Dawn that was specifically for fighting grease, so that maybe I can cut down the number of times I have to wash things.  …but if I had to pick one thing I would say these cute plates that I bought that have edges with ridges in them, cause stuff is always getting stuck around the ridges.  …I may just donate them.

  183. I only use my dishwasher when I have company over, so I wash dishes by had daily. I don’t really hate cleaning anything because I really do use Dawn!

  193. Cast-iron corn-stick pan. (This is a pan for corn “muffins” shaped like an ear of corn.) Pain to clean!!

  212. My most dreaded cleaning job when it comes to cleaning or baking is my bundt cake form lol.

  213. Thanks for the giveaway… our jumbo muffin tin pan, and our large, square lasagne pan which has 90 degree corners are tough to clean; have to get out an old toothbrush to clean them properly !
